Meethe Chawal , Zarda, Sweet Rice Pulao





 Ingredients 

1 cup basmati rice - soak for 30 minutes 
1/c cup sugar 
1/2 cup ghee
1/3 cup - dry fruit mix (almonds, cashew nut, raisins, dry coconut pieces)
Whole spice mix
- 2 pods green cardamom
- 4 cloves 
2 pinches of saffron 
1/8 tsp turmeric for color 
1 cup water

Pressure Cooker Method

  1. Heat ghee in a cooker and sauté on low whole apices and dry fruit mix. 
  2. Next add the soaked rice, water , saffron and pinch of turmeric.
  3. Add sugar and gently stir to ensure rice doesn't break.
  4. Pressure cook on high heat till one whistle and turn off the heat.
  5. At this point do not move the cooker to avoid release of pressure.
  6. Let the pressure release naturally and open the cooker and fluff the rice.
  7. In case the rice feels cooked, yet stiff, sprinkle some water and pressure cook at low heat for 2-3 minutes and let the cooker release the pressure slowly 
Open Stove Method 
  1. In a pan heat ghee and sauté spices and dry fruits.
  2. Add water followed by sugar, saffron and turmeric.
  3. After one boil, add soaked and drained rice and gently mix it
  4. Cook covered on low heat until rice is cooked and water is absorbed.
