Besan Milk Burfi (Fudge)


 Ingredients 

2 cup besan

1 cup milk powder

1.5 cup sugar

1 cup water

5 tbsp chopped/sliced almonds and pistachios

1 tsp ground green cardamom 

Method

  1. Grease the tray or line with parchment paper and keep aside
  2. Roast besan in ghee till it smells nutty 
  3. Add milk powder and mix thoroughly 
  4. Cool the mixture and add cardamom powder 
  5. Next prepare 1 string sugar syrup in a wok or pressure cook the syrup for 10 whistles to get 1 string consistency 
  6. Mix the roasted besan mix to the sugar syrup and stir thoroughly. Make sure the heat is turned off. Besan will absorb the water and mix will start coming together.
  7. You can cook further if the mixture is not holding together.
  8. Pour the mix on lined/greased tray and tap to even out the surface.
  9. Top it with sliced almond and pistachios and press down on the surface to stick it properly
  10. Cool for 30 minutes and slice !
