Besan Barfi: A Classic Indian Sweet

Besan barfi is a traditional Indian sweet made with gram flour, sugar, and milk powder. This delicious and easy-to-make dessert is a favorite among many. Let's dive into the recipe!




Ingredients:

  • 2 cups besan (gram flour)
  • 1 cup milk powder
  • 1.5 cups sugar
  • 1 cup water
  • 5 tablespoons chopped/sliced almonds and pistachios
  • 1 teaspoon ground green cardamom

Instructions:

  1. Prepare the pan: Grease a baking tray or line it with parchment paper.
  2. Roast the besan: Dry roast the besan in a pan until it turns golden brown and releases a nutty aroma.
  3. Combine dry ingredients: Add milk powder to the roasted besan and mix thoroughly. Let the mixture cool completely before adding the cardamom powder.
  4. Make the sugar syrup: In a saucepan, combine sugar and water. Cook until the syrup reaches a one-string consistency (take a little syrup between your thumb and index finger and stretch it; it should form a thin thread). Alternatively, pressure cook the syrup for 10 whistles to achieve the desired consistency.
  5. Combine the mixture: Pour the sugar syrup into the besan mixture while the syrup is still hot. Stir vigorously until the mixture comes together and the besan absorbs the syrup. If the mixture is too loose, cook it on low heat for a few minutes until it thickens.
  6. Set the barfi: Pour the mixture onto the prepared tray and spread it evenly. Press the chopped nuts into the surface.
  7. Cool and cut: Allow the barfi to cool completely before slicing it into desired shapes.

Tip: For a richer flavor, you can use ghee to roast the besan.

Homemade Diwali Diyas From Dough

Low Fat Baked Methi Muthia [Fenugreek Crackers] and Award Time

This is one healthy snack with goodness of fenugreek, olive oil and is baked !! This snack is ideal for someone like me who loves to much all day long:)) This is a guilt free snack which you can munch anywhere ! Ingredients: Whole flour - 5 tbsp ** Besan [gram flour] - 5 tbsp ** Kasoori Methi [Fenugreek Leaves] - 2 tbsp Cumin seeds - 1tsp Turmeric - 1/4 tsp Red chillie powder - 1/4 tsp Hing[Asfotedia] - pinch Salt to taste Olive oil - 2 tbsp Water to knead Method: Sieve all the powder ingredients including spices Now add cumin seeds, fenugreek leaves and olive oil and mix well with hands [ I have used MDH brand fenugreek leaves as I ran out of the fresh ones!
