Bhaat Na Shekla - Rice Savory Pancake

Ingredients Left over rice - 1 cup Besan (Gram flour)- 2-3 tbsp  Yogurt, thick - 1/4 cup Salt - to taste  Ajwain (Carom seeds) - 1/2 tsp Turmeric - 1/2 tsp Onions, diced -  1/2 cup Green chillies - to taste Sweet peppers, diced - 1/2 cup Water as needed to prepare the batter Cilantro chopped  Sugar - optional - I always add 1 tsp or more to balance sourness of yogurt Method Mix everything. Mash rice while mixing with hand  Make sure the consistency is not watery.  Cook it on low flame like pancake till both sides are crispy. It has nice tangy flavor because of yogurt.

Paneer Cheese Sandwich

Ingredients Paneer - crumbled Sweet peppers or bell peppers - fine chopped  Onion - fine chopped  Green chilies - to taste  Salt - to taste  Chaat masala - to taste Cilantro leaves Ginger - grated  Mecican cheese blend or any other cheese in your pantry Bread  Butter  Method Make paneer by boiling milk and curdling with vinegar or follow the recipe here  Mix the above ingredients and spread on a buttered toast and grill on both sides with butter . Enjoy crispy sandwich with ketchup and some potato chips !

Ingredients  Poha (चूड़ा ) - 1 cup Roasted panuts - 1/4 cup. Onions, chopped - 1/2 cup Green chilli - 1 Ginger - 1/2 inch, chopped Lemon juice - 1 tsp Mustard seeds - 1 tsp Turmeric - 1/2 tsp Coriander powder - 1/2 tsp Curry leaves (मीठी  à¤¨ीम ) - 1 spring Vegetable oil Boiled potato - optional Method: Rinse poha in water and drain excess water. Add mustard seeds to hot oil and once it crackles, add ginger, green chilies followed by chopped onions. When onion is pinkish and glossy add curry leaves, turmeric, salt and coriander powder. Add moist poha, peanuts (potatoes) and mix thoroughly Cook covered at low heat. Adjust for seasoning.  Squeeze some fresh lemon juice and enjoy.

Mixed Daal Appe (Paddu)

1 cup moong daal 1 cup urad daal 2 cup rice 1/4 tsp meethi seeds. Onion - 1/2 cup finely chopped Cilantro - chopped Salt to taste Ginger - optional Green pepper - optional Soak everything together overnight. Next morning grind, add salt and let it ferment for 7-8 h. The batter should not be runny. When u are ready to make appe add finely chopped onion, cilantro leaves, ginger (optional), green chili pepper (optional), adjust taste and proceed to making appe in your appe pan. Serve hot with ketchup or green chutney  

Dalia Upma

Ingredients Daliya (broken wheat) - 1cup Onions - 1/2 cup, sliced Tomatoes - 1/4 cup, chopped Ginger - 1 inch, chopped Green chilies - to taste Mixed veggies - 1 cup (chopped carrot, chopped beans, peas, chopped bell peppers ) Spices Turmeric - 1/2 tsp Coriander powder - 1 tsp Salt - to taste Mustard seeds - 1/2 tsp Curry leaves - 1-2 springs Optional Lemon - juice of fresh small lemon Cashew nuts - handful or more Cilantro - 1/4 cup, chopped Water - 2 cup Method Dry roast dalia and keep it aside. Heat oil in a cooker and add mustard oil when the oil is hot. The seeds will start to crackle.  Add curry leave, onions, green chilies and ginger. Saute' onions till translucent. Add chopped onions and cook for sometimes.  Next add all the spices, including salt, chopped vegetables and nuts. Saute' everything for 3-5 minutes on medium heat. Laal Chana Masala

Ingredients: Red channa, soak it over night and steam or pressure cook for softness - 1 cup Onion, sliced - 1/2 cup Bell peppers, chopped - 1/2 cup Cumin seeds - 1/2 tssp Tomatoes, chopped - 1/2 cup Green chillies - to taste Lemon juice - to taste Vegetable oil to cook Cumin seeds - 1/2 tsp Spices Turmureic - 1/4 tsp Cumin seeds - 1/2 tsp Corriander powder - 1/4 tsp Salt - to taste Method: Heat oil, add cumin seeds and once it starts to sprinkle, add green chillies and onion. Sautee till onions are pink. Now add chopped bell pepper followed by tomatoes.  Add all the spices. Now add red chana. Stir and cover the pan with the lid and cook at medium heat. Once ready, turn off the stove. Squeeze some fresh lemon juice before serving. 

Urad Daal and Oats Dosa ( White Gram Oats Crepe)

Ingredients: Urad daal (white, without skin) - 1 cup Fenugreek seeds - 1/8  tsp Rice - handful Rolled steel cut oats - 3 cups Salt to taste Method: Soak urad daal, fenugreek seeds and rice together overnight. Next day grind into thick paste Soak oats for 30 minutes and grind it separately Now mix the batters and grind again to make smooth paste with a pancake like consistency Add salt to taste  Heat dosa pan (any flat griddle), drizzle oil and pour a ladle full of dosa batter. Spread the batter in circular manner and cook the both sides till they are crisp. Enjoy with sambhar or chutney

Indian Egg Roll

Tired of boring breakfast everyday ? try this protein packed wrap ! Prepare it simple or spice it up, you are going to like it :) Ingredients: * Tortilla wraps - 1 Egg - 1 large Salt and pepper Shredded cheese - optional Cooking oil Method: Beat the egg with all salt, pepper and shredded cheese Heat oil in a griddle, put tortilla wrap and slightly cook on both sides Remove wrap from the griddle and keep it aside Now add some more oil to the pan and pour the egg batter and let it spread Once the egg is half cooked and slightly liquid, put the wrap on top  Flip the wrap ( fused with egg ) over and cook for few seconds Roll up the with egg side inside Variation:   * Use plain Indian paratha instead of wrap Spread some filling like onions, tomatoes, lettuce, ketchup on the egg side, roll it and serve

Chocolate Almond Biscotti

Biscotti is a twice baked cake originated in  Italy. They are best eaten by dunking in hot coffee on a rainy day :) They are large crunchy, dry cakes and very very easy to bake. This is a tried and tested recipe from Joy of Baking .   Ingredients: All-purpose flour - 1 3/4 cup Baking powder - 1 tsp Salt - 1/4 tsp Eggs - 2 large Sugar - 2/3 cup Vanilla extract - 1 tsp Toasted almonds - 1/2 cup Semi-sweet chocolate chips - 1/4 cups Method: Mixing  Set the oven 350 degrees F . Line the baking tray with parchment paper or foil. ( don't use wax paper in place of parchment paper. I did it and it was smokey inside the oven ) Beat eggs and sugar at high speed for 5 minutes. Now add vanilla extract.  In a separate bowl sieve flour, baking powder and salt at least 2 times. Now pour egg mixture and beat until mixed. Eggless Dates Pancakes

My son likes pancakes and so as me. Normally I use pre-mixes bought from the store. They come out very good, however need eggs all the time. There are times when I don't have eggs in the kitchen and my son craves for pancakes, then I am stuck and come up with some excuse. Last week I found this wonderful recipe on  Good Food . Loved the recipe, it has no eggs and uses dates. I love dates and always find excuse to use it. I couldn't wait to try it out. I made few minor changes to the recipe like added some cardamon powder and grated coconuts and it tasted awesome !!! Ingredients:  Wheat flour - 1 cup Pitted dates - 12-15 Milk - 1 cup and more Baking powder - 1 tsp Salt - 1/4 tsp *Sugar - to adjust taste or optional Cardamon powder - 1 tsp Grated coconut - 2 tbsp Cooking oil Method: Mix all the dry ingredients including sugar and coconuts in a bowl Soak dates in half cup of milk and put it in a microwave for 45seconds. Blend using a hand blender and make a paste....

Egg Paratha [Flat Bread Stuffed with Egg]

Ingredients: Eggs - 2, large Whole wheat flour - 1 cup Vegetable oil for cooking Cilantro leaves - 1/4 cup, chopped Chopped tomatoes - half, small, chopped Chopped green chillies Chaat masala - 1/2 tsp or more Salt - to taste Grated cheese - optional Method: First prepare semi soft dough from wheat flour with some water. Keep the dough covered. Beat eggs, add all chopped ingredient, salt and spices Pinch a tennis ball size dough, roll it into a small disc shape. Smear some oil and sprinkle flour and fold it into half. Again smear some oil followed by sprinkling some flour. Fold it again to form small triangle. Roll it again to larger size of the triangle [remember to roll it gently at this point as you will need to separate the layers for filling] Heat tawa [griddle] , brush some oil and place the rolled triangular paratha for 20 sec. Couscous Upma [Spicy Couscous]

Couscous is staple grain of North Africa same way as we have rice. It also resembles polenta or farina. Couscous is often considered Moroccan, however it is home to most North African countries. This is a great light complete meal. When I have nothing in my pantry or not in mood to cook something elaborate, yet healthy I cook up this one! It prepared the same way as suji (rava, semolina) upma. A properly cooked couscous should be fluffy and not slimy. It helps to Lower cholesterol Promote healthy arteries Control blood pressure Ingredients Steel cut oats - 1/2 cup Water - 1.5 cups Milk - 3/4 cup Raisin - 1 tbsp Fruit - strawberry Sugar 2.5 tbsp Cardamom powder - optional Method: Boil water and add oatmeal to the boiling water and stir to avoid clumping Now add milk and cook till oats get softer and porridge looks creamy Add sugar and raisins and take it off the stove Cool to room temperature and add strawberry slices before you are ready to eat. Corn chaat / Corn salad [Bhutta chaat]

Corn is a good source of vitamin B1, vitamin B5, folate, dietary fiber, vitamin C, phosphorus and manganese, therefore it makes part of any healthy menu ! Ingredients: Ear of corn - 1 Onion - 1/2 medium size Tomato- 1 medium size Lemon juice Salt - to taste Green chillies - to taste Cilantro leaves for garnishing Chaat masala - optional Method: First get the corn off the cob Now you are ready to prepare your chaat Add chopped onions, tomatoes, salt , chopped green chillies, chaat masala and toss it well Adjust the seasoning according to your taste Squeeze in fresh lemon juice and garnish with chopped cilantro leaves Eat it fresh !!
