Dark Chocolate Avocado Mousse

 


Ingredients

 1 medium avocado

 ½ cup semi-sweet chocolate chips

 ¼ cup sugar

 ¼ cup unsweetened cocoa powder

 1 tsp ground cinnamon

 1 tsp vanilla extract

 1/3 cup raspberries

Method

1. Mash avocado flesh in a blender or by fork

2. Melt chocolate chips in a microwave for  45 seconds to 1 minute, stirring frequently.

3. Add the sugar, cocoa powder, cinnamon, and vanilla extract to the melted chocolate and mix until smooth.

4. Add the melted chocolate mixture to the mashed avocado and blend until smooth.

5. Scoop the avocado chocolate mousse into  ramekins and refrigerate for at least 30 minutes before serving.

6. Add 1-2 raspberries to each individual mousse prior to serving.

Note: Please take out from fridge 15 minutes prior to serving for easy to dig spoon texture
