Vegan Brownie

 


Ingredients 

Liquid Mix
 6 pitted dates
1-1/4 cup cashew butter
1/2 cup maple syrup
1 tsp vanilla extract 
Dry Mix
1/2 cup oat flour
1/3 cup unsweetened cocoa powder
1 tsp baking soda
1 tsp baking powder


Method:
  1. Preheat oven at 350F and prepare the baking dish lined with parchment paper and lightly greased.
  2. Place dates in microwave safe bowl and cover with water and microwave for 2 minutes. Cool and drain excess water and keep it aside.
  3. Prepare cashew butter by churning cashews in a blender
  4. Liquid paste : Mix dates, cashew butter, maple syrup and vanilla extract in a food processor and blend it for 45 seconds
  5. Dry Blend: In a separate bowl place oat flour, salt, cocoa powder, baking soda and baking powder and mix well.
  6. Now combine both liquid and dry mixes and transfer the batter in the prepared baking pan.
  7. Use offset spatula dipped in water to gently spread the mixture. Dip the spatula in water as often to keep mixture from sticking to the spatula. 
  8. Bake for 30 minutes 
  9. Cool completely before serving.
