Indian Milk Cake

 Milk cake ....yummm, reminds of the sweet shop of my city, made some delicious milk cakes. It used to be our favorite pick from that store on the occasions of Rakshabandhan and Diwali. I am so happy that I found this recipe here and now I can make it my kitchen. Its a super duper easy recipe and it cooks in no time.

Milk Cake
Mothers day

Ingredients:

Milk - 6 cups
Lemon juice - ~ 3 tbsp
Sugar - 1/2 cup
Ghee or unsalted butter - 2 tbsp
Cardamon powder - pinch
Pistachios - for garnishing

Method
  1. Boil milk in a thick bottomed saucepan, preferably non-stick. Let it it boil for 2-3 minutes
  2. Add small amount of lemon juice to the milk and let it curdle. Do not add the entire amount of lemon juice, just enough to curdle the milk and not separate whey completely
  3. Boil for 4-5 minutes and remove 1-2 cups of whey water over a strainer to retain the curdled milk pieces that may come along with whey. Put back the curdled milk pieces back in the saucepan. [Throwing excess whey reduces tartness from the dish]
  4. Keep cooking and stirring till the whey evaporates. 
  5. Now add sugar, cardamon powder and ghee.
  6. Lower the heat and cook till the mixture comes together
  7. Transfer it on the greased plate and spread the mixture in the form of a square. Garnish with pistachios and let it cool
  8. Slice them in diamonds or squares

This is regarding the comment u left on egg curry in my blog....u have to crack open the egg straight on the onion mixture....the mixture spread a little but not complete...it will be like sunny side up omelet...hope it clears u r doubt...try up...it's simple and u will love it...do let me know, how it turned up...

I am not sure about soy milk. You can give a try. I am not sure if lemon can curdle soy milk.

Till now, I have been using rice cooker for just cooking rice. Recently I learnt that one cook toor daal (lentil soup), daal makhani and rice kheer. HA P PY DI W AL I ! !! ! This year for Diwali I made diyas [Diwali lights] at home!! They came out pretty nice ! I prepared it very simple but you can get creative by painting, glue small mirrors , beads and other stuff. Low Fat Baked Methi Muthia [Fenugreek Crackers] and Award Time

This is one healthy snack with goodness of fenugreek, olive oil and is baked !! This snack is ideal for someone like me who loves to much all day long:)) This is a guilt free snack which you can munch anywhere !
