Eggless Carrot Cake

Ingredients 2 cups all-purpose flour 2 teaspoons baking powder (This cake was baked with 1 tsp) 2 teaspoons baking soda (This cake was baked with 1 tsp) 2 teaspoons ground cinnamon 1 tsp nutmeg powder ¾ teaspoon salt 3 cups grated carrots (you can grate the carrots in a food processor fitted with a shredding blade) 1 cup coarsely chopped walnuts or pecans ½ cup raisins 1.5 cups sugar 3/4 cup canola oil 1 cup thick yogurt (better to you strained yogurt or greek yogurt) 1/4 cup whole milk Method Pre-heat the oven at 360 degree Fahrenheit and grease the baking pan and keep it aside. Combine all the ingredients in a mixing bowl and mix using electric hand mixer or wooden spatula. Add more milk if the batter looks dry. The final batter will be on the denser side. Bake for 40-50 minutes or until the toothpick inserted comes out clean. 

Besan Sooji Halwa (Gram Flour Semolina Fudge)

Ingredients Besan (Gram flour) - 1/2 cup Sooji (Semolina) - 1/2 cup  Ghee - 1/2 cup Sugar - 1/2 cup Water - 1 cup Almonds, sliced - 1-2 tbsp Method Roast besan and sooji in ghee. Roast till mixture releases nutty aroma. Lower the heat of the stove and add sugar followed by water. Stir well to break the lumps of sooji and besan mix.  Increase the heat of stove and cook still the mix starts coming together.  You may want to add more ghee for rich flavor. Garnish with choice of your nuts and enjoy.

Paneer Tikka

Ingredients  Paneer, cubed - about 400g Bell pepper - 2 cups, diced Onion - 2 cups, diced Marinade Thick yogurt - 1/2 cup Black pepper - 1/2 tsp Cumin powder - 1 tsp Garam masala - 1 tsp Turmeric powder - 1/4 tsp Chaat masala - 1/2 tsp Paprika powder - 2 tsp Roasted gram flour (besan) - 2 tsp Crushed ginger - 1/2 tbsp Crushed garlic - 1/2 tbsp Kasoori methi (dry fenugreek leaves ) - 1 tsp Mustard oil - 2 tbsp. Heat mustard oil and cool it. Lemon juice - 1 tsp Salt to taste Wooden or metal skewers Vegetable oil or ghee  Method First prepare the marinade by mixing all the ingredients under marinade. Next add big cubes of paneer, bell pepper and onion and coat the pieces with the marinade. Preferably use hands instead of spatula. Vegan Brownie

  Ingredients  Liquid Mix  6 pitted dates 1-1/4 cup cashew butter 1/2 cup maple syrup 1 tsp vanilla extract  Dry Mix 1/2 cup oat flour 1/3 cup unsweetened cocoa powder 1 tsp baking soda 1 tsp baking powder Method: Preheat oven at 350F and prepare the baking dish lined with parchment paper and lightly greased. Place dates in microwave safe bowl and cover with water and microwave for 2 minutes. Cool and drain excess water and keep it aside. Prepare cashew butter by churning cashews in a blender Liquid paste : Mix dates, cashew butter, maple syrup and vanilla extract in a food processor and blend it for 45 seconds Dry Blend : In a separate bowl place oat flour, salt, cocoa powder, baking soda and baking powder and mix well. Refreshing Amla Chutney (Indian Gooseberry Chutney)

  Refreshing Amla Chutney Introduction Amla, also known as Indian gooseberry, is a powerhouse of nutrients and offers numerous health benefits. This tangy and flavorful chutney is a great way to incorporate amla into your diet. Eggless Marble Cake - Egg Substitute: Milk and Yogurt

Ingredients for 6x2 inch pan  (Small Cake) Dry   Ingredients All purpose flour (APF) - 1 cup + 1 tbsp  Baking Powder - 1 tsp  Baking Soda - 1/4 tsp Salt - 1/4 tsp Sugar - 2/3 cup Wet Ingredient Vegetable Oil or Unsalted Butter - 1/4 cup Yogurt - 1/2 cup Milk (preferably room temp) - 1/8 cup Vanilla Extract - 1/2 tsp Cocoa Sauce Hot Water - 2 tbsp Cocoa Powder (Unsweetened) - 2 tbsp Method Pre-heat oven at 350F/180C. Line the pan with parchment paper and grease it lightly Prepare cocoa sauce  Mix cocoa powder to hot water and stir well and keep aside. Preparing vanilla batter Mix all the ingredients under dry ingredients and keep it aside In a separate bowl hand whisk all the wet ingredients.  Fold in dry ingredients to the wet ingredients and mix gently. Migliaccio : Traditional Italian Semolina Cake

This a very unique porridge to cake very aromatic dessert. The recipe is prepared in two step. Ingredients: Porridge Mix Whole milk - 1.5 cup Lemon zest - 1 tbsp Semolina flour - 1/4 cup +1/8 cup Sugar - 1/4 cup +1/8 cup Unsalted butter - 2 tbsp  Cardamom powder - 1/2 tsp Salt - 1/4 tsp Ricotta Base Ricotta cheese - 1.25 cups (6 oz) Large eggs - 2 Vanilla essence - 1 tsp Confectioners' sugar - as needed  Method Grease 8x3 springform pan with softened butter and sprinkle powder sugar. Adjust the oven rack to middle and heat oven at 375F Prepare Ricotta base by mixing ricotta cheese, eggs and vanilla essence. Use hand mixer to whisk in some air and keep it aside. Podi Masala

Ingredients Chana daal 1/2 cup Urad daal, de-husked - 1/4 cup Horse gram - 2 tbsp (optional) Curry leaves - 1/2 cup Red whole chilli pepper, dry - 3-4 Cumin seeds - 2 tbsp Sesame seeds - 2 tbsp Coconut - 2-3 tbsp Corriander seeds - 1 tbsp Tamarind, dry - small ball size Garlic - 3-4 cloves Asafetediea - 1/4 tsp Sesame seed oil - 1 tbsp Salt - to taste Method Dry roast daals (lentils), whole spice, curry leaves, chili peppers separately. Roast garlic in sesame oil. Mix all the ingredients and let it cool before you grind into a fine powder. Adjust salt and store in air tight conatiner. I make a huge batch and freeze it. Eggless Chocolate Cake

Ingredients  Curdle Milk  Milk - 1 cup Vinegar or lemon juice - 1.5 tbsp Liquid Ingredients Milk - 1/2 cup Oil - 1/2 cup Vanilla - 1/2 tsp Sugar - 1 cup  Dry Ingredients All purpose flour - 1.5 cup Unsweetened cocoa powder - 1/4 cup Milk powder - 2 tbsp Salt - 1/4 tsp Baking powder - 1 tsp Baking Soda - 1/2 tsp Topping - chopped mix nuts  Method Add vinegar/ lemon juice to 1 cup of milk and keep aside and let it curdle  Sift all dry ingredients and keep it aside Add all the ingredients listed under wet ingredients to curdled milk and mix well Add dry ingredients to above liquid mix and mix gently Follow cut and fold method to mix Transfer the batter to the greased baking tin and garnish with topping  Bake at 350 in a greased pan for 30 minutes or until tooth pick inserted comes out clean. 

Tutti Fruity / Tutti Frutti

Ingredients  Raw papaya - 1 lb (450 g) Food colors - 4 drops each (red, green, yellow)  Sugar syrup Water - 4 cups Sugar - 2 cups  Vanilla essence - 1 tsp Method Peel raw papaya and dice into very small cubes  Steam the cubes for 5 minutes and keep it aside Now cook  sugar syrup for 20 minutes on high heat  Next add steamed papaya and cook on high meat till the mixture starts drying out.  Add vanilla essence and mix well. Create three portions of the above cooked papaya- sugar mix in a three separate bowl. Add 4 drops of each bowl.  Mix well and spread it on a plate and sun dry for few days OR spread in a baking tray and dry in oven at 180F for few hours  Store dry tutti frutti in refrigerator or freezer. 

Eggless Tutti Fruity Cake

Ingredients  Wet Ingredients Yogurt - 1 cup  Sugar - 3/4 cup  Vanilla essence - 1/4 tsp Oil - 1/4 cup  Dry Ingredients Whole wheat flour or All purpose flour - 1cup  Baking soda - 1/2 tsp Baking powder - 3/4 tsp Cardamom powder (Optional) - 1/2 tsp Tutti- Frutti (Optional) - 1/2 cup  Method Whisk together liquid ingredients  Next add all the dry ingredients and fold in gently Add tutti-frutti Don't overmix. Just cut and fold several times  Transfer the batter to a greased baking tin. Bake at 350 in a greased pan for 30 minutes or until tooth pick inserted comes out clean.
