Eggless Carrot Cake




Ingredients

2 cups all-purpose flour

2 teaspoons baking powder (This cake was baked with 1 tsp)

2 teaspoons baking soda (This cake was baked with 1 tsp)

2 teaspoons ground cinnamon

1 tsp nutmeg powder

¾ teaspoon salt

3 cups grated carrots (you can grate the carrots in a food processor fitted with a shredding blade)

1 cup coarsely chopped walnuts or pecans

½ cup raisins

1.5 cups sugar

3/4 cup canola oil

1 cup thick yogurt (better to you strained yogurt or greek yogurt)

1/4 cup whole milk

Method

Pre-heat the oven at 360 degree Fahrenheit and grease the baking pan and keep it aside.

Combine all the ingredients in a mixing bowl and mix using electric hand mixer or wooden spatula. Add more milk if the batter looks dry. The final batter will be on the denser side.

Bake for 40-50 minutes or until the toothpick inserted comes out clean.
