Fudgy Sweet Potato Brownies (1 Egg, No Messy Texture)

If you love brownies but want a healthier twist, these sweet potato brownies are the answer. They’re rich, fudgy, and made with just one egg, so they hold together perfectly without turning into mush.





Ingredients

  • 1 cup mashed sweet potato (about 200–220g)

  • 1 egg

  • ½ cup sugar (or honey/maple syrup)

  • ⅓ cup cocoa powder

  • ½ cup flour (all-purpose or oat flour)

  • ¼ cup oil or melted butter

  • 1 tsp vanilla

  • ½ tsp baking powder

  • ¼ tsp salt

  • Optional: ½ cup chocolate chips or nuts


Instructions

  1. Preheat oven to 350°F (175°C)
    Line an 8×8 inch pan with parchment paper.

  2. Mash sweet potato until smooth.

  3. Mix wet ingredients: sweet potato, egg, oil, vanilla, and sugar.

  4. Add dry ingredients: cocoa, flour, baking powder, salt.

  5. Bake for 20–25 minutes
    Center should be set but still slightly glossy.

  6. Cool completely before slicing.
