Fudgy Sweet Potato Brownies (1 Egg, No Messy Texture)

Ingredients

1 cup mashed sweet potato (about 200–220g)

½ cup sugar (or honey/maple syrup)

⅓ cup cocoa powder

½ cup flour (all-purpose or oat flour)

¼ cup oil or melted butter

1 tsp vanilla

½ tsp baking powder

¼ tsp salt

Optional: ½ cup chocolate chips or nuts
Instructions

Preheat oven to 350°F (175°C)
Line an 8×8 inch pan with parchment paper. -
Mash sweet potato until smooth.

Mix wet ingredients: sweet potato, egg, oil, vanilla, and sugar.

Add dry ingredients: cocoa, flour, baking powder, salt.

Center should be set but still slightly glossy. -
