Tofu Curry

Indian version of a Tofu dish.....I don't like the raw smell of tofu, therefore I like to sauté tofu before dumping them in tomato gravy. It really takes the "beany" smell.... This dish cooks very quickly and is one of my Saturday meals when I am not in mood of cooking something elaborate, yet healthy :)

Ingredients

Tofu- extra firm - 1 small packet
1 onion [chopped] - chopped
1 tomato - chopped
Corriander powder - 1.5 tsp
Garam masala - 1tsp
Zeera powder - 1tsp
Kashmiri mirch -1tsp
Cumin and mustard seeds - 1 tsp
Salt - to taste
Cooking oil[canola oil] - 2 tbsp

Method:
  • Cut open tofu packet, drain water and cut tofu in 1 inch long small pieces
  • Heat 1tbsp oil in a non-stick pan and saute tofy pieces and keep aside
  • In another or same pan , heat 2 tbsp oil, add cumin and mustard seeds and let it crackle
  • sauté onions till they are pinkish and glazed with oil. Add chopped tomatoes and all the dry powders. Sauté well till the powders and tomato gets cooked and don't smell raw.
  • Add the desired amount of water [depends on your consistency] , bring it to boil and add fried Tofu pieces.
  • Cover the pot and let it cook for another 5-10 minutes on medium heat. Adjust for consistency, spices and garnish.
  • Serve it with plain rice or chapati [Roti/Indian flat bread]

Tofu is very healthy and nutritious, though i am not fond of tofu much but i do try to include in my diet :-)

Rice Kheer in Rice Cooker

Till now, I have been using rice cooker for just cooking rice. Recently I learnt that one cook toor daal (lentil soup), daal makhani and rice kheer. Since, dessert is my weakness, I thought I should start with rice kheer. Homemade Diwali Diyas From Dough

HA P PY DI W AL I ! !! ! This year for Diwali I made diyas [Diwali lights] at home!! They came out pretty nice ! I prepared it very simple but you can get creative by painting, glue small mirrors , beads and other stuff. Low Fat Baked Methi Muthia [Fenugreek Crackers] and Award Time

This is one healthy snack with goodness of fenugreek, olive oil and is baked !! This snack is ideal for someone like me who loves to much all day long:)) This is a guilt free snack which you can munch anywhere !
