English Muffin Mini Pizzas

Its a very very easy and quick Pizza.....just assemble everything, bake it and relish it!! Pizza on your table in minutes... Ingredients: English muffins [store bought] Marinara sauce [ home cooked or store bought] Cut veggies [broccoli, yellow squash, sliced carrots, onions] Mozzarella cheese Italian herbs [optional] Olive oil Method: Grease the baking sheet and keep it aside Pre-heat electric oven at 360 degree Fahrenheit Saute cut veggies in olive oil [don't over cook] Slice the muffins into half and spread them on baking tray Spread 2 tbsp marinara sauce on each muffin Add ~ 2tbsp cooked veggies Sprinkle Italian herb Top it with shredded mozzarella cheese Bake till the cheese is melted and browned Take it out of the oven and let the pizza's cool to warm temperature They are ready to eat with your favorite salad on the side !!! Eggless Banana-Walnut Cake

This my first time baking eggless cake and am so happy with the results. It tastes much better than the egg version and very moist from inside....must try it for yourself....Also, the recipe does not call for table sugar ! Ingredients All purpose flour - 1/2 cup Whole flour - 1/2 cup Yogurt - 1/2 cup Whole milk- 1 tbsp Honey * - 1/3 cup Banana - 1 medium (ripe) Canola oil - 1/2 cup Baking powder - 1/2 tsp Baking soda - 1/2 tsp Salt- 1/4 tsp Vanilla extract - 1/2tsp Chopped walnuts and Raisins - handful Method Pre- heat he oven at 360 degree Fahrenheit Combine all the dry ingredients and sieve it through at least 2 times Blend oil, yogurt, honey and vanilla with a beater for 1 minute at medium speed Add mashed banana Next fold in the dry ingredients from step 2 and mix gently without running the mixer Add milk to step 4 if the batter looks dry and mix with hand mixer for 2 minutes at medium speed Add walnuts and raisins into the batter and mix it gently ...

Paneer

This recipe is for making hard paneer, which is used in dishes like butter paneer and palak paneer Ingredients Whole milk - 8 cups [1/2 gallon] Acetic acid [sirka] - 1/4 cup [can vary] Method Boil milk (be careful, it should not stick to the bottom of the utensil) As the milk comes to boil, momentarily take it off the stove and add the white vinegar slowly and stir the milk gently The curd will start separating and the color of the whey will be light greenish [if not then add more vinegar] Put the pan back on stove for less than a minute and turn off the stove Strain through the cheese cloth in a strainer Rinse the curd with cold water to take off the vinegar flavor Wrap the cheese cloth onto itself and squeeze the excess water Shape the curd in the cheese cloth in to a block and wrap it tightly Place a heavy pan or books on the the above cheese cloth bundle for around 1 hr to drain excess water and paneer is made Slice the paneer into pieces and store them in fridge For long term stor...

Puris [Puffed Flat Bread]

Ingredients Whole flour - 1cup Water - 1/2 cup [depends] Oil to deep fry [the pan should have at least 2 inches of oil] Method Gradually add water to the whole wheat flour and mix it nicely with hands to form a firm dough Cover the dough with moist cloth or just a lid and let it sit for 30 min Divide the dough into small balls of equal size Sprinkle some flour on the rolling pan and roll the small dough balls into circles Heat oil in a deep frying pan. Check the temperature of oil by dropping a small piece of dough. If the dough floats, then oil is ready for deep frying. Very carefully place the rolled circles [puri] in the hot oil. Gently press the puris with the skimmer, the puris will pop Turn the popped puri to cook the other half Take out the puri from the oil when it appears slight brownish on both sides Drain excess oil on a paper towel Serve it with allo ki sabzi or curd or pickle or anything you want ! Savory Semolina Cakes

This is a wonderful recipe I found on Anjum Anand's Indian Food Made Easy on BBC . This cooks in 30 minutes with no before-hand preparation. Ingredients Semolina/ Sooji - 1 cup Yogurt - 1/2 cup Onion - 1/4 cup [chopped] Carrots - 1/4 cup [chopped] Green beans - 1/4 cup Ginger - 1/4 tbsp Turmeric - 1/2 tsp Green chilli - 1/2 tsp [chopped] Mustard seed - 1tsp Cumin Seed - 1/2 tsp Sesame seeds - 1tsp Sodium bicarbonate - 1/2 tsp Water - 1/2 cup Salt - to taste [add enough] Oil - 3 tbsp Method Pre-heat oven at 200 degree Fahrenheit Mix semolina, curd, salt, turmeric, chillies, onions, carrots, beans, peas, ginger and water Heat oil in a pan and add mustard, cumin seeds and let them crackle. Now add sesame seeds and stir this mixture into the above batter Adjust the consistency of batter with extra water [the batter is not too thin] Add sodium bicarbonate and pour the batter in greased pan Bake for 35-40 minutes, or until the top is golden brown. Palak Aloo Paratha [Spinach - Potato Flat Bread]

Ingredients Palak [Spinach] - 1 cup [steamed and pureed] Aatta [Whole flour] - 3 cup Potato - 2 large[boiled] Salt - to taste Green chilies - to taste Coriander powder[Dhaniya] - 1 tsp Dry mango powder [Aamchoor] - 1 tsp Ginger - 1 tbsp [finely chopped] Ajwain - 1tsp [roast and grind it] water - as required Method: chop palak if fresh or thaw frozen palk steam and puree' it make dough by mixing palak puree' , whole wheat flour and ajwain Leave the dough covered to set for 30 minutes In the meantime mash boiled potato and add ginger, salt, amchur, coriander powder, chillies and mix properly. This is my favorite cake and with the recipe below your cake can never go wrong! Do try this one .
