Samosas - Vegetable Golden Triangles




Ingredients:


For the dough:
All purpose flour - 1/2 cup
Semolia flour [Sooji] - 1/2 tbsp
Oil - 1.5 Tbsp
Salt - 1/4 Tsp
Lukewarm water - 1/4 cup
For the filling:

Potato - 2 large
Green chillies - 1 chopped
Coriander powder - 1 tsp
Garam masala - 1/4 tsp
Mango powder [amchur] - 1 tsp
Cumin seeds - 1/2 tsp
Green peas - 1/2 cup
Salt to taste
Cashew nut and raisins - optional
Method:

Dough
  • Mix flour, sooji, salt and oil together and knead to make a soft dough
  • Cover the dough with damp cloth and leave it aside for 30 minutes
Filling
  • Boil potatoes and cut them into small pieces
  • Heat oil in a pan add cumin seeds and let it crackle
  • Now add chopped chillies, coriander powder and stir it nicely
  • Add green peas and cook till they get tender
  • Add the potato pieces and stir-fry for 5 minutes.
  • Add garam masala , amchur powder and salt
  • Mix the filling nicely and adjust the seasoning according to taste
Making samosa
  • Before filling the samosas prepare a paste by mixing 1tbsp all - purpose flour and 2 tbsp water and keep it aside
  • Knead the dough once again and divide them into 3 bals
  • Roll each ball into 6 inch diameter and divide the circle into half by running a sharp knife to get two semi-circles
  • Apply the all-purpose flour paste on the sides and hold the semicircle with your hand and gently roll it to make a cone
  • Now fill it with potato mixture leaving enough space to close the broader end of samosa
  • Gently seal the samosa by pinching the sides
  • Repeat the same step with left over dough balls
  • Heat oil in a pan to medium heat and when the oil is hot enough, place the samosas in the hot oil
  • Fry the samosas till they are golden brown in color and they are ready to serve with chutney

Rice Kheer in Rice Cooker

Till now, I have been using rice cooker for just cooking rice. Recently I learnt that one cook toor daal (lentil soup), daal makhani and rice kheer. Since, dessert is my weakness, I thought I should start with rice kheer. Homemade Diwali Diyas From Dough

HA P PY DI W AL I ! !! ! This year for Diwali I made diyas [Diwali lights] at home!! They came out pretty nice ! I prepared it very simple but you can get creative by painting, glue small mirrors , beads and other stuff. Low Fat Baked Methi Muthia [Fenugreek Crackers] and Award Time

This is one healthy snack with goodness of fenugreek, olive oil and is baked !! This snack is ideal for someone like me who loves to much all day long:)) This is a guilt free snack which you can munch anywhere !
