Date Muffins

Healthiest muffin I have ever baked......do try this




Ingredients:

Whole wheat flour - 1cup
All purpose flour - 1 cup
Honey - 1/3 cup
Cinnamon powder - 1tsp
Orange zest - 1/4 tsp
Baking powder - 2 tsp
Baking soda - 1.5 tsp
Salt - 1/2 tsp
Egg - 1 medium
Vanilla essence - 1tsp
Canola oil - 1/4 cup
Whole Milk - 2/3 cup
Orange juice - 1/3 cup
Chopped dates - 1 cup
Chopped pineapples - 1/2 cup
Chopped walnuts - 1/4 cup [optional]

Method:
  1. Pre-heat the oven at 375 degree F and grease the muffin pan
  2. Sift all the powder ingredients and keep it aside
  3. Beat egg, oil, honey, vanilla essence, oil, juice, orange zest lightly for 2 minutes
  4. Add the powder ingredients from step 1 and fold in nicely
  5. Add milk little by little to make a nice paste
  6. Add the chopped dates, pineapple and walnuts and mix it with hand blender for less than a minute
  7. Spoon the mix in the muffin cups and bake for 25 minutes till the muffin turns brown and a toothpick inserted in the center come out clean
Notes:
  1. My muffins didn't turn very sweet, but the pieces of chopped dates and pineapple in between bites added the sweetness which I liked it. Increase the quantity of honey for desired sweetness
  2. Adding too much of orange zest can add bitterness.
  3. If the final mixture looks dry, then add more milk. Remember, the mixture should not be liquid. The consistency should be enough to spoon it easily
  4. While baking if the muffins turn brown quickly then reduce the heat to 350 and let it bake for remaining time

Rice Kheer in Rice Cooker

Till now, I have been using rice cooker for just cooking rice. Recently I learnt that one cook toor daal (lentil soup), daal makhani and rice kheer. Since, dessert is my weakness, I thought I should start with rice kheer. Homemade Diwali Diyas From Dough

HA P PY DI W AL I ! !! ! This year for Diwali I made diyas [Diwali lights] at home!! They came out pretty nice ! I prepared it very simple but you can get creative by painting, glue small mirrors , beads and other stuff. Low Fat Baked Methi Muthia [Fenugreek Crackers] and Award Time

This is one healthy snack with goodness of fenugreek, olive oil and is baked !! This snack is ideal for someone like me who loves to much all day long:)) This is a guilt free snack which you can munch anywhere ! Ingredients: Whole flour - 5 tbsp ** Besan [gram flour] - 5 tbsp ** Kasoori Methi [Fenugreek Leaves] - 2 tbsp Cumin seeds - 1tsp Turmeric - 1/4 tsp Red chillie powder - 1/4 tsp Hing[Asfotedia] - pinch Salt to taste Olive oil - 2 tbsp Water to knead Method: Sieve all the powder ingredients including spices Now add cumin seeds, fenugreek leaves and olive oil and mix well with hands [ I have used MDH brand fenugreek leaves as I ran out of the fresh ones!
