Bharva Baigan / Baigan Kalonjee (Stuffed Eggplant)

Ingredients:
Indian Eggplant - 5-6 small, washed
Vegetable oil - 4-5 tbsp
Dry Spices
Garam Masala  - 1/2 tsp
Corriander Powder - 2 tbsp
Red Chili Powder - 1/2 tsp or more
Salt - as per taste
Dry Mango Powder (Khatai / Amchur)- 1 tbsp
Cumin Powder (Jeera) - 2 tbsp
Turmeric -1/4 tsp

Method:
  1. Thoroughly wash the eggplants and wipe it with the paper towel
  2. Mix all the spices and adjust the quantities to suit your taste. Remember to add little more salt than you usually do, as when stuffing goes in eggplant, amount of salt is normalized.
  3. Slit the eggplants into 4 segments from bottom to top, leaving the top intact.
  4. Stuff the spice mixture into the eggplant and keep it aside (Optional: you may also want to tie  thread around stuffed eggplants to secure the stuffing from coming out. I don't do that and stuffed eggplants come out great.)
  5. Heat the oil. Add all the stuffed eggplants and let it cook covered on low to medium heat.
  6. In between, gently stir the stuffed eggplants to change sides from time to time. 
  7. Keep cooking till the eggplant feels soft from inside and skin turns crispy.
  8. Serve it with rice and arhar tadka daal

Till now, I have been using rice cooker for just cooking rice. Recently I learnt that one cook toor daal (lentil soup), daal makhani and rice kheer. Since, dessert is my weakness, I thought I should start with rice kheer. Homemade Diwali Diyas From Dough

HA P PY DI W AL I ! !! ! This year for Diwali I made diyas [Diwali lights] at home!! They came out pretty nice ! I prepared it very simple but you can get creative by painting, glue small mirrors , beads and other stuff. Low Fat Baked Methi Muthia [Fenugreek Crackers] and Award Time

This is one healthy snack with goodness of fenugreek, olive oil and is baked !! This snack is ideal for someone like me who loves to much all day long:)) This is a guilt free snack which you can munch anywhere !
