Samosas - Vegetable Golden Triangles

Ingredients: For the dough: All purpose flour - 1/2 cup Semolia flour [Sooji] - 1/2 tbsp Oil - 1.5 Tbsp Salt - 1/4 Tsp Lukewarm water - 1/4 cup For the filling: Potato - 2 large Green chillies - 1 chopped Coriander powder - 1 tsp Garam masala - 1/4 tsp Mango powder [amchur] - 1 tsp Cumin seeds - 1/2 tsp Green peas - 1/2 cup Salt to taste Cashew nut and raisins - optional Method: Dough Mix flour, sooji, salt and oil together and knead to make a soft dough Cover the dough with damp cloth and leave it aside for 30 minutes Filling Boil potatoes and cut them into small pieces Heat oil in a pan add cumin seeds and let it crackle Now add chopped chillies, coriander powder and stir it nicely Add green peas and cook till they get tender Add the potato pieces and stir-fry for 5 minutes. Date Muffins

Healthiest muffin I have ever baked......do try this Ingredients: Whole wheat flour - 1cup All purpose flour - 1 cup Honey - 1/3 cup Cinnamon powder - 1tsp Orange zest - 1/4 tsp Baking powder - 2 tsp Baking soda - 1.5 tsp Salt - 1/2 tsp Egg - 1 medium Vanilla essence - 1tsp Canola oil - 1/4 cup Whole Milk - 2/3 cup Orange juice - 1/3 cup Chopped dates - 1 cup Chopped pineapples - 1/2 cup Chopped walnuts - 1/4 cup [optional] Method: Pre-heat the oven at 375 degree F and grease the muffin pan Sift all the powder ingredients and keep it aside Beat egg, oil, honey, vanilla essence, oil, juice, orange zest lightly for 2 minutes Add the powder ingredients from step 1 and fold in nicely Add milk little by little to make a nice paste Add the chopped dates, pineapple and walnuts and mix it with hand blender for less than a minute Spoon the mix in the muffin cups and bake for 25 minutes till the muffin turns brown and a toothpick inserted in the center come out ...

Khajoor rolls [Date rolls]

Ingredients Pitted dates [khajoor]- 1cup Chopped nuts [cashew nuts, pistachios] - 1/2 cup Ghee [clarified butter]- 2Tbsp Grated coconut powder - 1 cup Method: Chop the pitted dates [if not pitted, remove the seeds and proceed] warm 1 tbsp ghee in a thick bottomed pan and fry the dry fruits and keep it aside add remaining ghee in the same pan and once the ghee is warm add chopped dates and keep mixing till it become soft and starts coming together [cook on a slow heat] now add the nuts and mix it thoroughly let it cool at room temperature and start rolling them with your hands in the form of balls or rolls now gently roll it over powdered coconut and keep it aside once they cool down they are ready to serve enjoy this guilt free dessert and its healthy too!! Notes: You can avoid frying nuts in ghee, instead dry roast them in a pan or microwave don't cook the dates for too long, it can result in chewy rolls instead of easy bite rolls
