Finally I baked eggless oatmeal cookies...its been on my list for very long time, for some reason kept pushing. While searching for the recipe today I came across Chef in you , I liked the idea of roasting oatmeal and walnuts and grinding them to fine powder. The author has used maple syrup and rice syrup in the recipe. In order to replace these ingredients , I used Madhurams idea of adding sugar and honey. End result, my cookies turned out just great!!!!

- In a separate bowl blend oil, honey, sugar and vanilla. Add the dry ingredients, soaked raisins and mix thoroughly with a spatula.
- Make a dough, pinch out small balls [almost 8] , flatten in the center and place it on baking sheet at least 2 inch apart and bake in the center of the oven at 350 degree Fahrenheit for 10-15 minutes. Mine were browned in 11 minutes.
- Cool and store in air-tight containers...
