Ingredients for Marinara sauce:
- medium plump tomatoes - 5
- medium sized onion-1
- garlic pods -3-4
- bay leaf - 1
- extra virgin olive oil - 1/4 cup
- tomato puree - 1-2 tsp
- salt - according to your taste
- black pepper - according to taste
- basil leaves - 5-6
- Penne pasta - 2 cups
- blend of veggies [bell pepper, beans, broccoli, baby corns, carrots]
- shredded Mozrella cheese - 1 cup
- chopped basil leaves - 5-6
Method:
First prepare the marinara sauce:
- heat olive oil add minced garlic [make sure you don't burn it]
- add bay leaves and chopped onions and some sprinkle salt
- saute the onions till they get translucent
- add chopped tomatoes and give a nice stir and cover the pot and cook on low heat
- when the tomatoes become mushy add in the tomato puree' , stir the contents and let it cook on slow flame for atleast 30 minutes
- keep checking in between to ensure the mix does not stick at the bottom of the pan
- in the end add in the chopped basil leaves and black pepper powder
- cook for 5 more minutes and taste for seasoning and adjust if needed
- boil pasta in water [you can add some salt to cook it fast]
- while the pasta noodles are boiling , saute' the chopped veggies in olive oil
- once the veggies are cooked throw in the boiled pasta and marinara sauce
- give a nice stir and cook for 2-3 minutes
- add in the cheese and mix gently and transfer it to the serving plate
- garnish it with basil leaves
- You can use seasonal vegetables
- throw away the bay leaves once the marinara sauce is cooked
- You can altogether skip the cheese to make it healthier
- you can add dried basil leaves if you don't fresh ones
