Eggless Dates Pancakes

My son likes pancakes and so as me. Normally I use pre-mixes bought from the store. They come out very good, however need eggs all the time. There are times when I don't have eggs in the kitchen and my son craves for pancakes, then I am stuck and come up with some excuse. Last week I found this wonderful recipe on  Good Food. Loved the recipe, it has no eggs and uses dates. I love dates and always find excuse to use it. I couldn't wait to try it out. I made few minor changes to the recipe like added some cardamon powder and grated coconuts and it tasted awesome !!!

eggless dates pancakes

Ingredients: 
Wheat flour - 1 cup
Pitted dates - 12-15
Milk - 1 cup and more
Baking powder - 1 tsp
Salt - 1/4 tsp
*Sugar - to adjust taste or optional
Cardamon powder - 1 tsp
Grated coconut - 2 tbsp
Cooking oil

Method:
  1. Mix all the dry ingredients including sugar and coconuts in a bowl
  2. Soak dates in half cup of milk and put it in a microwave for 45seconds. Blend using a hand blender and make a paste. 
  3. Mix the the paste to the dry ingredients and add rest of the milk. Add more milk (or water) to adjust the consistency of the batter. The batter should not be very thin, a little thicker than dosa batter. 
  4. Heat griddle, preferably non-stick. Pour some cooking oil and 1-2 small laddles of batter. The batter will spread on its own on the gridle. Cook both sides until they are golden brown.
  5. Serve hot !!!
*NOTE: I served it with a dollop of butter and maple syrup, just like I eat pancakes at IHOP. Since maple syrup is pretty sweet, you may want to omit adding sugar to the batter.
