Eggless Banana-Walnut Cake

This my first time baking eggless cake and am so happy with the results. It tastes much better than the egg version and very moist from inside....must try it for yourself....Also, the recipe does not call for table sugar !



Ingredients

All purpose flour - 1/2 cup
Whole flour - 1/2 cup
Yogurt - 1/2 cup
Whole milk- 1 tbsp
Honey* - 1/3 cup
Banana - 1 medium (ripe)
Canola oil - 1/2 cup
Baking powder - 1/2 tsp
Baking soda - 1/2 tsp
Salt- 1/4 tsp
Vanilla extract - 1/2tsp
Chopped walnuts and Raisins - handful

Method
  1. Pre- heat he oven at 360 degree Fahrenheit
  2. Combine all the dry ingredients and sieve it through at least 2 times
  3. Blend oil, yogurt, honey and vanilla with a beater for 1 minute at medium speed
  4. Add mashed banana
  5. Next fold in the dry ingredients from step 2 and mix gently without running the mixer
  6. Add milk to step 4 if the batter looks dry and mix with hand mixer for 2 minutes at medium speed
  7. Add walnuts and raisins into the batter and mix it gently
  8. Pour the batter in a greased cake or muffin pan and sprinkle chopped walnut on the top and bake for 20-25 minutes or until the tooth-pick inserted comes out clean
  9. Let the cake cool on a cooling tray for 1 hr before you indulge into it :))
  10. Eat it by itself or serve it with vanilla ice-cream!!
Note
  • * You can replace honey with 1/2 cup sugar
  • Sometimes I start baking at 350 degree Fahrenheit and increase it to 360 after 10 minutes of baking. I like to slow bake my cake!
  • The cake is just sweet and really goes well with frosting or ice-cream, if you want more sweetness , add 1/4 cup of white sugar along with honey
  • It is very very important to cool the cake before you take it out of the pan...trust me, the cake comes out clean.....

oh, this looks good and it woul dbe so easy to veganize...i'll bet you can also replace the honey with agave nectar if you don't want table sugar.

All purpose flour is also known as Maida in Hindi. I have never baked a cake in a microwave, can't help you here:( I'll try something soon and post it....keep visiting......

Cake us super soft...it's almost falling apart.Thanks! But it took almost 45 mins for cake to bake.

I have used honey to replace sugar and eggs to replace egg. I know lot of recipes where people have used condensed milk. Try it out, it should come fine. Do update me. Good luck !

i recently tried an eggless banana cake recipe that uses only whole wheat flour. the outcome was not all that good... w.r.t texture,the cake was thick and not porous at the base but fortunately better texture in the rest of the part...i will try this recipe since this has a mixture of APF and wheat flour. btw can i use ordinary chapatti atta or should i go for wheat pastry flour which stands in between APF and chappati atta...

whenever i've tried using atta(ordinary) for baking mine has failed. the base(few millimeter) remains thick & dense with the other parts sightly porous.
should i use any special wheat flour.... say like whole wheat pastry flour, which they say is lighter than chappati atta... plz omment..

ordinary atta may not work. I used special whole wheat flour which is not same as whole wheat flour we use to make roti. Whole wheat pastry flour should work. Do post how your cake turns out.

Yes, its whole wheat pastry flour. If you trying to bake for the first time then I would recommend you trying following recipes,as they are tested multiple times and have always come out good.
