English Muffin Mini Pizzas

Its a very very easy and quick Pizza.....just assemble everything, bake it and relish it!!

Pizza on your table in minutes...

Ingredients:English muffins [store bought]
Marinara sauce [home cooked or store bought]
Cut veggies [broccoli, yellow squash, sliced carrots, onions]Mozzarella cheeseItalian herbs [optional]
Olive oil
Grease the baking sheet and keep it asidePre-heat electric oven at 360 degree FahrenheitSaute cut veggies in olive oil [don't over cook]
Slice the muffins into half and spread them on baking tray
Spread 2 tbsp marinara sauceon each muffin
Add ~ 2tbsp cooked veggies
Sprinkle Italian herbTop it with shredded mozzarella cheeseBake till the cheese is melted and brownedTake it out of the oven and let the pizza's cool to warm temperatureThey are ready to eat with your favorite salad on the side !!!Notes:

Eggless Banana-Walnut Cake

This my first time baking eggless cake and am so happy with the results. It tastes much better than the egg version and very moist from inside....must try it for yourself....Also, the recipe does not call for table sugar !


All purpose flour - 1/2 cup
Whole flour - 1/2 cup
Yogurt - 1/2 cup
Whole milk- 1 tbsp
Honey* - 1/3 cup
Banana - 1 medium (ripe)
Canola oil - 1/2 cup
Baking powder - 1/2 tsp
Baking soda - 1/2 tsp
Salt- 1/4 tsp
Vanilla extract - 1/2tsp
Chopped walnuts and Raisins - handful

Pre- heat he oven at 360 degree Fahrenheit
Combine all the dry ingredients and sieve it through at least 2 times Blend oil, yogurt, honey and vanilla with a beater for 1 minute at medium speedAdd mashed banana
Next fold in the dry ingredients from step 2 and mix gently without running the mixerAdd milk to step 4 if the batter looks dry and mix with hand mixer for 2 minutes at medium speed
Add walnuts and raisins into the batter and mix it gently
Pour the batter in a greased cake or muff…


This recipe is for making hard paneer, which is used in dishes like butter paneer and palak paneer


Whole milk - 8 cups [1/2 gallon]
Acetic acid [sirka] - 1/4 cup [can vary]

Boil milk (be careful, it should not stick to the bottom of the utensil)As the milk comes to boil, momentarily take it off the stove and add the white vinegar slowly and stir the milk gentlyThe curd will start separating and the color of the whey will be light greenish [if not then add more vinegar]
Put the pan back on stove for less than a minute and turn off the stoveStrain through the cheese cloth in a strainerRinse the curd with cold water to take off the vinegar flavorWrap the cheese cloth onto itself and squeeze the excess water
Shape the curd in the cheese cloth in to a block and wrap it tightly
Place a heavy pan or books on the the above cheese cloth bundle for around 1 hr to drain excess water and paneer is made
Slice the paneer into pieces and store them in fridge

Puris [Puffed Flat Bread]


Whole flour - 1cup
Water - 1/2 cup [depends]
Oil to deep fry [the pan should have at least 2 inches of oil]

Gradually add water to the whole wheat flour and mix it nicely with hands to form a firm doughCover the dough with moist cloth or just a lid and let it sit for 30 minDivide the dough into small balls of equal sizeSprinkle some flour on the rolling pan and roll the small dough balls into circles
Heat oil in a deep frying pan. Check the temperature of oil by dropping a small piece of dough. If the dough floats, then oil is ready for deep frying.Very carefully place the rolled circles [puri] in the hot oil.Gently press the puris with the skimmer, the puris will popTurn the popped puri to cook the other half Take out the puri from the oil when it appears slight brownish on both sides
Drain excess oil on a paper towel
Serve it with allo ki sabzi or curd or pickle or anything you want !Note:

Savory Semolina Cakes

This is a wonderful recipe I found onAnjum Anand's Indian Food Made Easy on BBC. This cooks in 30 minutes with no before-hand preparation.


Semolina/ Sooji - 1 cup
Yogurt - 1/2 cup
Onion - 1/4 cup [chopped]
Carrots - 1/4 cup [chopped]
Green beans - 1/4 cup
Ginger - 1/4 tbsp
Turmeric - 1/2 tsp
Green chilli - 1/2 tsp [chopped]
Mustard seed - 1tsp
Cumin Seed - 1/2 tsp
Sesame seeds - 1tsp
Sodium bicarbonate - 1/2 tsp
Water - 1/2 cup
Salt - to taste [add enough]
Oil - 3 tbsp

Pre-heat oven at 200 degree Fahrenheit Mix semolina, curd, salt, turmeric, chillies, onions, carrots, beans, peas, ginger and waterHeat oil in a pan and add mustard, cumin seeds and let them crackle. Now add sesame seeds and stir this mixture into the above batterAdjust the consistency of batter with extra water [the batter is not too thin]Add sodium bicarbonate and pour the batter in greased pan

Palak Aloo Paratha [Spinach - Potato Flat Bread]


Palak [Spinach] - 1 cup [steamed and pureed]
Aatta [Whole flour] - 3 cup
Potato - 2 large[boiled]
Salt - to taste
Green chilies - to taste
Coriander powder[Dhaniya] - 1 tsp
Dry mango powder [Aamchoor] - 1 tsp
Ginger - 1 tbsp [finely chopped]
Ajwain - 1tsp [roast and grind it]
water - as required
chop palak if fresh or thaw frozen palksteam and puree' it
make dough by mixing palak puree' , whole wheat flour and ajwainLeave the dough covered to set for 30 minutesIn the meantime mash boiled potato and add ginger, salt, amchur, coriander powder, chillies and mix properly. Adjust spices and salt according to your tasteMake small balls out of the dough and and roll it a little
Place potato mixture on the rolled dough ball and seal the sides with your fingerSprinkle little dry flour on the rolling board and roll it gently with rolling pin into a circlePut the rolled circle on a hot griddle kept on medium heat and roast the bread on both sides by applying little oil each sideSe…

Chocolate cake

This is my favorite cake and with the recipe below your cake can never go wrong! Do try this one.


For the Cake
Cocoa powder- 1/3cup [unsweetened]
All purpose flour - 1/3cup + 1/2 cup
Baking powder - 1/2 tsp + 1/4 tsp
Baking soda - 1/2 tsp + 1/4 tsp
Salt - 1/2 tsp
Milk - 1/2 cup
Water - 1/2 cup
Oil - 1/4 cup
Egg - 1
Vanilla extract - 1 tsp
Walnut - 1/2 cup [optional]

For the Chocolate Sauce
cocoa powder - 2/3 cup
sugar - 1 2/3 cup
water - 1 1/4 cup
vanilla extract - 1 tsp


For cake
Heat the oven at 350 degree Fahrenheit
Grease the 9'x9' baking pan and put it aside
Sift together flour, cocoa powder, salt, baking powder, baking soda at least 2 timesIn a mixing bowl add milk, oil, vanilla essence, sugar and egg and beat with a mixer at medium speed for 1 minuteSlowly fold in the dry powder and beat for another 1 minute
In the end stir in the boiling water and mix gentlyAdd chopped walnut to add crunch to the cakePour the mix into the greased baking pan
